It has a 11.4% protein and retains its colour due to characteristic Anthrocyanins when baked imparting a unique flavour profile and a soft chocolate hue to breads and rolls, muffins, pastry and cakes
*for a good rise we recommend you mix between 20-30% with one of our strong flours.
