Cumbria, due to its climate, is not known for the regular production of good quality bread wheat. But occasionally it does happen. Eden Yard at Plumpton have been growing wheat that has been used for making bread making flour.
After a couple of trials by our baker Neville we have decided to change our basic bread flour to that produced from this grain. We have secured a sufficient supply to provide for both the bakery and our sales for the next 12 months.
The variety is Extase with a protein content of 14.19% and a falling Hagberg of 288 secs.
It is a beautiful grain to mill and gives a fine flour both as white and wholemeal.
We collect the grain directly from the farm only 15 miles away using our electric van. So a greatly reduced food mileage and a low carbon footprint.
It is available in 1.5 kg bags and bulk orders.
